The diagnosis — FOG buildup, 3-inch line
Newark restaurant, downtown near the Prudential Center. Kitchen drains had been getting slower for weeks, then on a Friday night the 3-inch grease line backed up entirely — sink water rising, dishwasher pumping into the floor sink. We were on-site within 90 minutes with a trailer-mounted hydro-jetter. The fix — 4,000 PSI hydro-jetting + camera verification
Cabling won't clear FOG — it just bores a hole through it. We ran a 4,000 PSI water jet with a rotating warthog nozzle (chews through grease without damaging cast iron), full 40 feet of line back to the city tap. Recovered camera footage to confirm pipe walls were down to bare metal again. Swapped out the kitchen grease trap (long overdue — it had been bypassed by the previous tenant).
The result — monthly maintenance contract
Restaurant manager signed a quarterly maintenance contract with us — we jet the kitchen line every 90 days and inspect the grease trap every visit. They've had zero backups in the 8 months since.
